Black
Bean Cakes
2 cans of black beans, drained
1 medium onion, diced finely
2 cloves garlic, minced
2 eggs, beaten lightly
1 tablespoon flour
1 tablespoon yellow corn meal
Salt & Pepper to taste
Dash of red pepper, to taste, optional
about 1/4 cup of olive oil

Place beans in large mixing bowl
and mash with the back of a large spoon. Add all
other ingredients except olive oil. Place olive
oil in large frying pan on medium heat. Using
your hands shape mixture into paddies and place
in frying pan. Fry until done, turning as needed.
Drain on plate with paper towels.
(can be used instead of
hamburger meat on hamburger buns or as the mail
course with a salad and French Bread. A salad
dressing of your choice can be spread over cakes
for additional flavor. Sour cream can also be a
choice over cakes.)
